Pumpkin Energy Bites

These pumpkin energy bites are great for quick snacking and healthy eating! I found the original recipe here, but have altered it slightly to suit my taste buds and sneak in a few more ingredients.

Combine the following ingredients:

*3 cups dry, uncooked rolled oats

*1 cup peanut or almond butter (my favorite is a coconut peanut butter)

*1 cup (8oz) organic pumpkin puree (add a few more oz for more pumpkin flavor)

*2/3 cup raw honey (pure maple syrup optional for sweeter bites)

*1/2 tsp cinnamon

*1/4 tsp ground cloves

*1/4 tsp ground nutmeg

*1/2 tsp vanilla extract

*4-6 tbsp. chia seeds (start with 4 and add more if dough seems too wet)

*2-4 tbsp. ground flax seed

*1 cup total of any of the following: chopped walnuts, chopped almonds, chopped peanuts, coconut flakes

*Optional: 1/4 to 1/2 cup mini chocolate chips (I use chocolate chips and a few tsp of 100% cacao powder)

Combine all ingredients with a mixer or some elbow grease.

Roll into the size of golf balls and place on a parchment paper lined cookie sheet.

Pumpkin energy bites

Freeze for one hour or until you can’t resist temptation any longer.

Store in an airtight container and refrigerate or freeze, and enjoy!
